I made mocqueca because I was looking for some delicate flavors that summer would truly love and embrace. I think it was outworldly to pair it with Rice Crafter’s Ronaldo rice as it cooks naturally to al dente {perfect alongside the soft texture of the fish} and a touch of nuttiness in each grain {the perfect companion to the palm oil}.

I thought this dish would be perfect to spotlight the new to market rice by Rice Crafters. Rice Crafters are bringing sustainably produced, single origin and single-variety of rice to the market. Treating the rice as you would a particular vintage of wine. Unlike much other rice, Rice Crafters not a blend of rice from several different areas of rice patties, this all comes from vast plains of Sado in Portugal. The rice its self is very versatile, it can work in kedegree or rice pudding.

When mentioning Ronaldo in conversation, often you may be asked to clarify whether you mean ‘plump’ Ronaldo, or ‘second best player on the planet’ Ronaldo 🐸 ☕️ (Don’t have a cow lads) Today, neither are on our lips. However, what is passing our lips more and more these days is Ronaldo Rice from @ricecrafters The introduction came at a masterclass in Kedegree from Michy starred chef @domchapman Basmati was benched and forward came the Corimbo variety to form a risotto esque, creamy, quail egg packed kedegree like no other. Portugal may have a new most sought after export. We’d happily bin off most rice varieties in favour of old Ronny. Go check them out @ricecrafters and have a pop.

When you book a holiday off the back of an event 🤷🏻♀️ Treated to dinner with @ricecrafters cooked by Michelin star chef @domchapman 😍 This is single origin rice from just outside of Lisbon! I had no idea that’s a thing but boy you can taste the difference! I’ve made a cheeky minestrone using Ronaldo rice rather than pasta.
